When life gets busy, eat some protein

IMG_5045My oldest was in his first soccer tournament this weekend that involved a 2 hour drive, 6 hours on the field, and a 2 hour drive back home.  (yes, I really should pay more attention when I agree to these things!)

Since I didn’t want to go the entire day without eating or be put in a position where I had to eat the food being sold on the field, I did a little pre-planning and packing for the trip.  Protein is key for keeping yourself fueled and feeling full, so here are some of my go-to protein sources.

*hard boiled eggs:  Yes, I eat the whole thing and it is delicious.

*almonds:  These I need to portion out as I can eat far too many in a short amount of time. I put them in a baggie and leave the big container at home.

*Protein shakes: I made one of these for the road. I throw together water, baby spinach, a few frozen strawberries, 1/4 a banana, 1/4 an avocado, a sprinkle of chia seeds, a splash of almond milk, and then a gigantic scoop of Vega Sport protein powder.  I like the plant based powder but you should find a protein powder that you like and works the best for your needs.

*Chicken breast:  I don’t really know how to cook anything so I just throw chicken breasts in the crockpot and cook on low for about 6 (?) hours. Basically until they are done.  I  cut it up in pieces and use throughout the week for me and the kids.   It’s boring and plain, but it works for me!  (although it is delicious when you mix it with 1/2 an avocado!)
